Here in the Strathbogie Ranges the cool ripening period allows the fruit to ripen slowly, and the flavours of lemon and lime develop, while still retaining a youthful “tang” of acidity. After picking, the grapes are gently pressed with some whole bunches being retained. Then after settling, the juice is racked and a long cool fermentation occurs over a number of weeks in stainless steel. Bottling occurs within 12 months to retain freshness. This dry Riesling style is always great drinking when young, but will gain in complexity if left to develop, for many years to come.
